Favorite Owensboro Eats

Y’all. I love to eat. So it was so much fun eating my way through my hometown for this post. While I’m partial to OBKY, I really do think we have some of the best food in the country (lookin’ at you BBQ).

Old Hickory Bar-B-Q (& Moonlite Bar-B-Q Inn and Ole South Bar-B-Q)
Owensboro is known for its barbecue. Like anytime someone important comes to visit our town, they go to Moonlite. BBQ is a big deal here and I love it. We even have a BBQ festival (and 5k!) in May to celebrate all of the BBQ goodness. I could eat BBQ all year round, but since it is finally starting to get cooler, I have been craving burgoo. Such a staple in Kentucky!

The Famous Bistro
Y’all. While Owensboro is known for comfort food and barbecue, The Famous Bistro has some pretty great Greek-inspired dishes. Their gyros are the best and I love their cozy dining room or the option to eat on the sidewalk patio. They also have Greek favorites like spanakopita and moussakas. It’s one of my favorite downtown Owensboro restaurants and when the weather is warm, I love to go there and eat lunch outside.

So while this isn’t a local place, I always think it is. It’s locally-owned, but part of a franchise. They have the best salads, soups, loaves of bread and treats. My best friend and I eat breakfast there every Friday and I love all of their free bread samples. The banana chocolate chip will always be one of my favorites.

Honorable Mentions
Colby’s Fine Food & Spirits — I love their sweet potato fries.* I really want to try The Lure Seafood and Grille — it’s a cute little place tucked inside one of our downtown hotels. Since my husband is allergic to fish, that eliminates this place for date night, but I am needing to round up my girls and visit!

* We have entirely way too many fast food and pizza places in our town.

Something I need to work on — overeating

I love to run. I also love to eat.

While I know marathon training isn’t the time to lose weight, if we’re being honest, I thought I would lose at least 5-10 pounds while training. I mean I’m running more than ever, so I’m burning a ton of calories, right?

But my problem? I love Chick-fil-A. And doughnuts.

I’ll eat healthy for breakfast and lunch, then overeat at supper. Or the weekend will come and we’ll order pizza one night and go to a steakhouse the next.

I try not to keep a lot of unhealthy snacks in the house, but I can easily eat a bag of Sun Chips in one sitting.

I do love this post from FAnnetastic Food about intuitive eating + mindful eating. Now I just need to learn how to do it!

As someone who has struggled with my weight my entire life, it sucks to say I can run miles and miles but I’m still 15-20 pounds overweight. I want to fuel my body the best I can, but I also don’t want to restrict myself from the foods I love.
Balance is hard.Just know, you’re not alone. I love to run, but I love to eat. One day, I find a great balance that fits myself but also helps me be the best version of myself.

If you’ve been reading my blog for any amount of time, you know I don’t like to cook, but I do like to bake.

I also have a huge sweet tooth.

Maple butter blondie. These look so good! Since it’s winter, I think you can get away with this maple-flavored treat.

10-minute magical chocolate almond butter superfood seed bars from Half Baked Harvest. Not only are they made with great ingredients, but they taste wonderful too! Mine didn’t turn out as pretty as the picture (and I used regular chocolate chips instead of vegan) but they were a hit! Check out her page, she has lots of great recipes (and photos and videos!).

Gooey chocolate-chip sandwich bars. I’ve said this before and I’ll say it again. CHOCOLATE CHIP COOKIES ARE MY FAVORITE. I could seriously eat them every day.

No-bake biscoff marshmallow chocolate bars. These are so easy to make and come together in less than five minutes!

Funfetti gooey bars from Crazy for Crust. These would be so great for a birthday party.

Blueberry banana french toast

I’ve talked about this before — I am not a cook. I don’t enjoy cooking, but I do enjoy hosting friends and family and eating! I also like baking and simple recipes.

Also, similar to Leslie Knope, I believe breakfast is the best meal of the day.

So today, I’m sharing a decadent and delicious breakfast recipe. While I usually eat the same simple breakfast throughout the week, I love making a special breakfast on Sundays or around the holidays. This french toast recipe is great all year long and can be easily changed by substituting different fruits.

Ingredients
1 large egg
¼ cup milk of your choice (almond, skim, regular)
A dash or two of cinnamon
½ banana, sliced (or more if you want!)
A handful or two of blueberries
2 slices bread of your choice

Instructions
Beat the egg, milk, and cinnamon together in a small bowl.
Heat your skillet and spray with coconut oil or another non-stick spray.
Add the sliced banana and blueberries and cook for approximately 2 minutes or enough to get them warm and soft.
Remove from pan and set aside in a bowl. Cover to keep warm.
Place one slice of bread in the egg, milk, and cinnamon mixture, flip to coat.
Put the bread in the pan and cook until it’s golden brown.
Repeat with the second slice of bread.
Plate the toast and top with the warm bananas and blueberries.

EAT UP!

Quick & Easy Chocolate Chip Cookies

I love baking cookies. While I am not a cook, I do like to dabble in baking. I also love chocolate chip cookies — seriously one of my top five favorite foods. I have several cookie recipes that I keep in rotation, and this is one of them!

I plan on making some later today while I enjoy a snow day off from teaching.

Betty Crocker Ultimate Chocolate Chip Cookies

Ingredients
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 ounces) semisweet chocolate chips (2 cups)

Steps
Heat oven to 375F
Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

Pour a big glass of milk and eat up! & don’t forget to share 😉

Friday Favorites v.84

Happy cold Friday from Kentucky! We have ice here and snow is expected to come this afternoon. BRRR!

Tomorrow morning is my last run with my little brother before he heads back to college for the spring semester. It’s been so nice to have company during my long runs and I can’t wait for him to be over the summer. He’s planning on training for a spring half marathon! I think my running bug got passed on to him.

3. I am all for efficiency. Anne’s make-ahead veggie egg sandwiches are super simple and easy to make. If you need a breakfast idea for next week, I suggest this recipe!

6. Target has the most adorable Valentine’s Day decorations in their dollar section! I picked up a few notepads for my desk and I love seeing all the pink and purple — it instantly brightens my mood!

7. BITMOJI. Ryan and I are SO late to this party, but we have been loving sending them back and forth for several weeks now.

Avocado fried egg toast

Today I have a super easy + delicious breakfast idea for you! I’m planning on making this x2 today after my 8-mile run.

Preheat the frying pan. Get it medium-hot.

While your frying pan is heating up prep your toast, cut your avocado and mash it on your toast + add any other toppings you like.

Then, crack the egg into a small bowl, (it’ll be easier for transferring to your skillet) then slide the egg out of the bowl and into the frying pan. Put a lid on the frying pan — keep that heat in there!

Cook for about 4 minutes, until the egg white solidifies; the yolk will thicken slightly as it heats. Do not flip the egg.

When your egg is done, slide the cooked egg onto your prepared avocado toast. Sprinkle with salt and pepper and eat up!

30 minute homemade pizza

Every single Thursday night is pizza night in the Richardson household. This is one my favorite traditions Ryan and I started soon after we got married and it’s one I hope stays around forever. We both love pizza and whether it’s carried out from a national chain store (we love Pizza Hut!), made from scratch, or a baked frozen pizza, it makes for a simple, but delicious meal that I don’t have to think about.

So today I’m sharing a basic recipe for homemade pizza. Enjoy!

Saturday snacks

Hi friends! Popping in real fast to tell you if you are looking for a quick and healthy snack, these Bear Naked peanut butter and honey granola bites are BOMB. They are so good.

I’m not a cook, so while I know lots of people make their own energy bites, I rather just buy mine. Got these today for the first and I’m hooked!

Friday Favorites v.78

This week kicked my butt. Work was hard, my workouts were hard, meal planning didn’t go great and overall it was exhausting. Even though I am wiped, I feel like I am plowing through the thick of things and I can see the light at the end of the tunnel (24 days til Christmas!)

But, let’s talk about the good and fun things from this week with my usual Friday Favorites post!

1. I hit my daily goal of 10,000 steps four times this week! Even though I try to run almost every day after work, I sit so much at my desk job during the day that I don’t always hit 10,000 steps a day. I love job, but I do wish I could move around more at least have a stand-up desk. My Fitbit Blaze has been great and reminding me to move more every house. Even the small steps add up!

2. Gift guide for the monogram addict.

3. These Nature’s Bakery fig bars are the best! They are dairy-free, made with no bad ingredients and only have 10 grams of sugar (which is still kind of a lot, but way less than others bars I’ve tried) I got them at Kroger and they have been a great mid-day snack.

4. I taught my last class earlier this week and I am so proud of myself for making it through the semester. I’ve learned so much and I can’t wait to improve and teach again next semester. Go Panthers!

5. I snagged this cup at TJ Maxx on Black Friday and it’s perfect for me! I work at a newspaper and teach a media writing class. So if you have any newspaper-lovers in your life, grab this cup. It’d make a great stocking stuffer!

6. I finally got my hands on Grace Not Perfection AND A Simplified Life, both by Emily Ley. I’ve about 3/4 of the way through GNP and I can’t wait to finish it this weekend.

7. I roasted sweet potatoes for the first time earlier this week and HOLY YUM they are a new favorite.

8. Murphy loves our Christmas tree! It’s so cute to see him play with the ornaments and lay in his bed and look at the lights. Now I just need to put presents under the tree!
